These cookies are the bomb! Sweet, crunchy and chewy all in one cookie, and Ghirardelli white chocolate chips make them irresistible. I keep a bag or two of these chocolate chips on hand for my favorite baking projects. I am never disappointed by the results.

What are Macadamia Nuts?

Macadamia nuts are tree nuts grown in Australia, Brazil and Hawaii. The seeds of these nuts are typically roasted and have a wonderful buttery flavor. They are perfect to use in cookies and other dessert recipes. Macadamia nuts are found in the baking aisle of your grocery store, where you also find pecans and walnuts.

White Chocolate Macadamia Nut Cookies

Recipe makes 30 large cookies.

  • 1 cup unsalted butter, softened
  • 1 1/2 cups granulated sugar
  • 1 cup light brown sugar, packed
  • 2 eggs, room temperature
  • 2 teaspoons vanilla extract
  • 3 cups all purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 11-ounce bag (2 cups) of Ghirardelli White Chocolate Chips
  • 1 cup Macadamia Nuts

How to make White Chocolate Macadamia Nut Cookies?

  • Preheat the oven to 350 degrees.
  • Mix butter and sugars until blended and fluffy.
  • Stir in vanilla. Next, beat in the eggs, one at a time.
  • Blend in flour, baking soda and salt. Mix well.
  • Stir in white chips and nuts. Reserve about 1/3 of the nuts to add a couple to the top of each cookie before baking. This makes for a pretty cookie and ensures that there are nuts in each cookie.
  • Drop cookie dough by rounded tablespoonfuls onto parchment lined baking sheets. Place them about 4 inches apart. Bake for 12-14 minutes. Cookies are golden brown when done.
  • Remove to wire racks to cool completely.

This recipe makes about 3 dozen large cookies or 4 dozen medium cookies. But, it won’t be enough, because they are just THAT good!
