Ingredients
5mediumrusset potatoes, sliced
1mediumonion, thinly sliced
4tablespoonsbutter
3tablespoonsall-purpose flour
3cupsmilk
4ouncessharp cheddar cheese, shredded
1teaspoonsalt
1teaspoonblack pepper
chopped chives for garnish, optional
Instructions
Heat the oven to 350 degrees. Peel and slice the potatoes and the onion.
Spray an 8x8-inch baking dish with cooking spray and layer the potatoes with the sliced onions. Add salt and black pepper.
In a saucepan over medium heat, melt the butter. Add the flour and cook for 1 minute while stirring. Slowly add the milk while stirring constantly. Add the shredded cheese to the milk mixture and stir the sauce for about 5 minutes. The cheese will melt and the sauce will thicken. Add salt and pepper to taste. Pour the cheese sauce over the potatoes in the baking dish.
Bake at 350 degrees for one 50-55 minutes. Recipe makes 8 servings.
