Avocado Shrimp Salsa is a bright and tasty combination of fresh summer flavors, including tomato, cucumber, avocado, sweet pepper, cilantro, shrimp and lime.

Ingredients
1poundshrimp, peeled, deveined, cooked and chopped
2mediumtomatoes, seeded and chopped
2mediumavocados, ripe, peeled and chopped
1cupcilantro, fresh, minced
1mediumred pepper, chopped
3/4cupgreen onions, thinly sliced
1/2cupcucumber, peeled, seeded, chopped
3tablespoonslime juice
1jalapeno pepper, seeded and chopped (or green pepper)
1teaspoonsalt
1/4teaspoonpepper
Tortilla chips, for serving
Instructions
In a large bowl, combine the first 11 ingredients. Serve with tortilla chips.

Notes
I chose to make a milder version, so I omitted the jalapeno pepper and used some diced green pepper instead. If you enjoy a bit of a kick, include the jalapeno pepper, but make sure to remove the seeds.
