Ingredients
24ouncesAtlantic salmon, 4 6-ounce fillets
1/2teaspoonsalt
1/2 teaspoonblack pepper
1/3cupbalsamic vinegar
1teaspoongarlic, minced
1/2cupwhite wine, or chicken stock
2teaspoonsDijon mustard
1teaspoonoregano, or Italian Seasoning
Instructions
Cover a baking sheet with foil. Spray the foil with cooking spray. Place the salmon fillets on the baking sheet skin side down. Sprinkle each piece of fish with salt and pepper.
Add 1 tablespoon of olive oil to a small saucepan or skillet and heat over medium heat. Add garlic, balsamic vinegar, white wine, and mustard. Stir until ingredients are combined well and heated through.
Spoon glaze over each piece of salmon. Add a pinch of dried oregano or Italian Seasoning. Bake in a 375 degree oven for 12 to 14 minutes, until fish is flaky and pink. The fish will separate easily from the skin when removed from the baking sheet.
Serve the salmon with simple sides, such as herbed rice and steamed broccoli. Use the rest of the glaze to top the fish or pour it over the rice for added flavor. You can also add some chopped green onions, if desired.
