Ingredients
1cupunsalted butter, softened
1 1/2cupssugar
2largebananas, mashed
4eggs
2/3cupmilk
2teaspoonsvanilla
4cupsflour
2teaspoonsbaking soda
1teaspoonsalt
1/2cupwalnuts, chopped, or pecans
1cupchocolate chips
Instructions
In a large bowl, beat the butter and sugar until creamy.
Mash bananas with a fork and add them to the bowl, along with the eggs, milk and vanilla. Beat until combined.
Mix the dry ingredients together, except nuts and chips, in a separate bowl. Begin to add the flour mixture to the wet ingredients, one cup at a time, mixing after each addition.
Divide the batter evenly into two bowls. Stir in 1 cup of chocolate chips to the first bowl and mix. Spray mini loaf pan or mini bundt pan with cooking spray. Spoon the batter into the pan. You can also use a regular size loaf pan to make one large loaf.
Add 1/2 cup chopped walnuts or pecans to the second bowl of batter. Mix until combined.
Spoon the batter into a mini loaf pan that has been sprayed with cooking spray. Bake at 350 degrees for 18-22 minutes. Insert a toothpick in the center to test if the bread is done.
If you are using a regular size loaf pan, bake at 350 degrees for 50-55 minutes. Allow to cool and remove loaves from the pan. Recipe makes two loaves or 16 muffins.
