A sweet, fruity bar with a buttery crust, blackberry filling, and a crunchy oatmeal and cinnamon topping.

Ingredients
Crust:
1 3/4cupsall-purpose flour
1/4cupgranulated sugar
3/4cupCOLD butter, unsalted and cubed (1 1/2 sticks)
1pinchsalt
Filling:
2 1/2cupsblackberries, or raspberries
1/4cupgranulated sugar
1/4cupwater
2tablespoonscornstarch
1/2cupblackberry jam, or raspberry jam, seedless
Topping:
1/2cupCOLD butter, unsalted and cubed (1 stick)
1/2cupall-purpose flour
1/2cupquick oats
1/2cupbrown sugar
1teaspooncinnamon
Instructions
Preheat the oven to 350 degrees Fahrenheit. To make the crust, pulse the flour, butter, sugar and salt in a food processor. Pulse until mixtures resembles coarse sand.
Put the crust mixture in a 13x9-inch baking dish and press evenly over the bottom of the pan. Bake for 20 minutes at 350 degrees until lightly golden brown. Remove from the oven and cool for 10 minutes.
For the filling, mix the blackberries, sugar, water and cornstarch in a small saucepan over medium heat. Use a potato masher to mash the berries and continue stirring often. Cook for 10-15 minutes until thickened.
Turn off the heat and add the blackberry jam. Stir until combined. Cool for 10 minutes. Pour over the crust and spread evenly.
Pulse the ingredients for the topping in the food processor until well combined. Sprinkle the topping over the blackberry filling.
Bake for another 20 minutes until the crumb topping is golden brown. Cool completely and cut into bars. Recipe makes 15 servings.

Notes
You can make a bit of glaze by mixing a cup of powdered sugar and a splash of milk. Drizzle it over the bars for an extra sweet treat. My family loves these bars and so will yours!
