Instructions
Preheat the oven to 350 degrees Fahrenheit.
Mix sugar, oil, eggs, milk and vanilla in medium bowl for 1 minute with an electric mixer on medium speed. Set aside.
Stir flour, baking soda, salt and baking cocoa in a large bowl until combined.
Add wet ingredients to dry and mix on low speed for two minutes.
Wash and shred zucchini in a food processor or mini-chopper. Fold zucchini and chocolate chips into the batter.
Pour batter into a 9x5 loaf pan that has been sprayed with cooking spray. Bake for 45-50 minutes at 350 degrees Fahrenheit.
Allow the bread to cool for 20 minutes before removing it to a plate to cool completely. Recipe makes 10 servings.
