Lay flour tortillas, 2 at a time, on a rimmed sheet pan. Brush each with melted butter. Put sugar and cinnamon in an empty spice shaker or mix together in a small bowl. Sprinkle buttered tortillas with sugar mixture.
Cut Halloween shapes in the sugared tortillas, using cookie cutters. Ghosts, flying bats, pumpkins and black cats are all good choice. Place the tortilla cut-outs on a sheet pan covered with parchment paper. You should get 6 crisps from each tortilla.
Bake in the oven at 375 degrees for 8 minutes. Remove from the oven when golden and allow to cool. Repeat until all tortilla cut-outs have been baked. Recipe makes about 36-40 cinnamon crisps, depending on the size of your cookie cutters.

Notes
What can I do with the scraps from cut out tortillas left on the baking sheet?Cut them into small pieces and toss them on a your sheet pan. Bake them for 5 to 6 minutes in the oven. They are great to crumble over vanilla ice cream for a cinnamon flavored treat. Store leftover whole crisps in a plastic bag for up to one week.
