Total Time: 2 hourshrs
Ingredients
8ouncescream cheese, room temperature
1cupunsalted butter, 2 sticks, room temperature
2eggs, room temperature
1teaspoonvanilla
1teaspoonbaking powder
2cupsconfectioners' sugar
2 1/2cupsall-purpose flour
Instructions
Heat the oven to 350 degrees.
Using a stand mixer, slowly beat the soft cream cheese and butter until combined.
Add the eggs one at a time and beat until fully incorporated. Add the vanilla and 1 teaspoon of baking powder.
Stir in the sugar 1/2 cup at a time, mix well. Then add the flour 1/2 cup at a time mixing after each addition. Beat slowly until all ingredients are thoroughly incorporated and dough is smooth, about 3 minutes.
Cover the cookie dough with plastic wrap and refrigerate it for at least one hour.
Remove the chilled dough from the refrigerator. Using a small scoop, form 1 inch balls and place them on a cookie sheet about 1 1/2 inches apart. I was able to bake 20 cookies per baking sheet.
Press each cookie slightly flat with your fingers and dust them lightly with powdered sugar.
I dusted the first 20 cookies with powdered sugar before baking. The second sheet of cookies were rolled randomly through fine red sugar, not fully coating them. I wanted a different red pattern on each cookie for Valentine's Day. Remember to press them a bit flat before baking.
Bake cookies at 350 degrees for 9-11 minutes. Allow the cookies to cool on the baking sheet for 2 minutes. Remove them to a wire rack to cool completely. This recipe makes 4 dozen cookies.
Notes
How to decorate Cream Cheese Cookies:
After baking, I drizzled the plain cookies with a little bit of homemade frosting. Mix 1/2 cup powdered sugar with 2 teaspoons of milk and stir until smooth. Use a spoon to drizzle the frosting over the cookies.
The cookies that are rolled in red sugar are finished with a light dusting of powdered sugar. I love the marbled effect it gave them.
