Ingredients
1whole egg
2egg whites
6tablespoonsunsalted butter, softened
2teaspoonsvanilla extract
1cupgranulated sugar, divided
1/2cupall-purpose flour
1/4cupbaking cocoa
6ouncesreduced-fat cream cheese, softened
Instructions
Preheat the oven to 350 degrees. Beat together 3/4 cup sugar and butter in a medium bowl. Beat in one whole egg, one egg white, and vanilla until creamy.
Combine the flour and the baking cocoa in a small bowl. I used organic baking cocoa that we brought back from a trip to the Dominican Republic. Gradually add the flour mixture to the sugar mixture and beat until blended completely.
Spray a 9-inch square baking pan with cooking spray. Pour the batter into the pan and spread evenly.
In a small bowl, beat 1/4 cup sugar and softened cream cheese until smooth. Add the second egg white and blend well. Drop the cream cheese mixture by tablespoonfuls over the brownies. Using a knife, drag it through the batter to create the swirl.
Bake the brownies for 25-30 minutes at 350 degrees. Make sure the brownies are set in the middle and the edges pull away from the sides of the pan. Recipe makes 12 servings.

Notes
Tip for making the best brownies:Be sure to set your dairy products out on the counter to come to room temperature at least 30 minutes before making this recipe. You want the butter and cream cheese to be softened. Room temperature ingredients will incorporate into your batter more easily.
