Ingredients
12small new potatoes
1tablespoonolive oil
1 teaspoonsalt
1/2 teaspoonblack pepper
1tablespoonParmesan, grated, optional
Instructions
Preheat the oven to 375 degrees. Spray a sheet pan with cooking spray.
Wash and dry potatoes, place them on the sheet pan. If potatoes are larger, cut them down to 1 1/2 inches in size. If cut, place them skin-side up. Drizzle lightly with olive oil, season with salt and black pepper.
Bake for 35 minutes at 375 degrees. (Baking time may vary slightly depending on the size of potatoes.) Remove from the oven and smash to 1/2 inch thickness by pressing down with a spatula or the back of a wooden spoon.
Heat oven to broil. Broil potatoes for 2 to 3 minutes, watching them for doneness. Turn potatoes over after 3 minutes and broil for another 2 minutes. Remove from the oven when potatoes are crispy and golden. Immediately sprinkle with grated Parmesan cheese, if desired. Recipe makes 4 servings or 12 crispy smashed potato rounds.
Serve them with your favorite condiments, including ketchup, sour cream and chives, or ranch dip.

Notes
Usually potatoes are less expensive when you buy them in larger quantities and the potatoes are a bit larger in size. No worries, simply cut your potatoes before baking. They can be cut in half or quarters and baked. They may not be round, but they will still be crispy and delicious.
