This light summer salad is easy to prepare and combines lots of fresh seasonal ingredients. Cucumber Caprese Salad can be served with fish, poultry or beef. The balsamic dressing and fresh basil leaves are the perfect finishing touch to this colorful plate of crunchy veggies.

Ingredients
1English cucumber, sliced or cut into ribbons
1 1/2cupscherry tomatoes, cut in half
4ouncesfresh mozzarella cheese, whole milk Italian style, cubed or sliced thin
1/2 cupbasil leaves, fresh, whole
1/4 cupbalsamic vinegar
1/4 cupolive oil
1 teaspoongarlic, minced
1tablespoonwhite sugar
1 pinchsalt
1 pinchblack pepper
Instructions
Arrange the cucumbers, tomatoes, and mozzarella cheese cubes on a large platter.
Add the basil leaves to the salad.
Mix the vinegar, olive oil and remaining dressing ingredients in a small jar. Shake the jar to mix.
Keep salad and dressing refrigerated until ready to serve.

How to use a spiralizer?
To use the spiral cutter, simply wash your cucumber and cut off a bit at both ends. Twist the cucumber through the spiralizer, if it is a handheld version. If it is one that sits on the counter top, just position the cucumber between the blade and the prongs to hold it in place and turn the handle. It is just that easy. This spiralizer is also great because it additionally removes the seeds as it cuts the cucumber into thin ribbons.
