One of the most popular treats in Ohio is Dark Chocolate Buckeyes with a creamy peanut butter center and a rich outer coating of dark chocolate.

Ingredients
2cupscreamy peanut butter
1/2cupbutter, softened
2teaspoonsvanilla
3 1/2cupspowdered sugar
12ouncesdark chocolate chips
Instructions
Using a stand mixer, beat the peanut butter, butter, and vanilla on medium speed until smooth and creamy.
Add one cup of powdered sugar and beat on low until combined. Continue to add the powdered sugar, one cup at a time, until all sugar is combined with the peanut butter mixture. The mixture will be thick and will hold together when pinched between your fingers.
Using a 1 inch scoop, scoop the peanut butter mixture and roll into balls. Put the peanut butter balls on a cookie sheet lined with parchment paper. Place a toothpick in the top of each ball and put them in the freezer for 20-30 minutes to get cold.
Put the chocolate chips in the top of a double-boiler and heat until melted. Stir the chocolate until smooth and remove from the heat.
Remove the peanut butter balls from the freezer and dip each in chocolate. It works best if the peanut butter balls are cold and the chocolate is warm. Make sure to leave a small round circle without chocolate on top of each buckeye.
Put the buckeyes back on the tray to harden. Remove the toothpick and pinch the hole on top closed with your fingers. Store them in the refrigerator until ready to serve.
