Ingredients
2cupsall-purpose flour
1/2cupold-fashioned oats
1teaspoonbaking soda
1teaspoonsalt
1/2cupunsalted butter, softened (1 stick)
1/2cuppeanut butter, creamy
3/4cupsugar
3/4cuplight brown sugar, packed
1teaspoonvanilla
2largeeggs
1cupwhite chocolate chips
1cupsemi-sweet chocolate chips, minis
Instructions
Preheat the oven to 350 degrees Fahrenheit. Combine the dry ingredients in a medium bowl. Set aside. Using a stand mixer, beat the butter, peanut butter, sugar, and brown sugar. Add the vanilla and eggs. Mix until blended.
Add the dry ingredients in small amounts until all is combined. Stir in the semi-sweet chocolate and white chocolate chips.
Using a 1 1/2-inch scoop, place large balls of cookie dough onto a cookie sheet lined with parchment paper. This recipe makes about 20-22 cookies depending on the size of your scoop. Each cookie is about three inches wide when baked. If you want smaller cookies, remember to reduce your baking time accordingly.
Bake at 350 degrees for about 13-14 minutes. Cookies will be lightly golden brown. Remove cookies from the oven and allow to cool on the cookie sheet for 5 minutes.
Remove cookies from the cookie sheet to a wire rack to cool completely. Store them in an airtight container. Recipe makes 22 cookies.
