Ingredients
1cuppineapple, fresh, diced
1/2cupseedless cucumber, diced
1/2cupred pepper, diced
1/4cupyellow onion, diced (or shallots)
2tablespoonscilantro, chopped (or parsley)
2tablespoonspineapple juice
1tablespoonlime juice
1/2teaspoonsalt
Instructions
Dice all of your ingredients into small pieces, about 1/4 inch each. Place them in a medium bowl and add the lime and pineapple juice.
Season with salt and chill in the refrigerator until ready to serve. Recipe makes 4 servings.

What can I add to Fresh Pineapple Salsa?
