Ingredients
2 largenectarines, cut in half, pits removed
2ouncesgoat cheese, crumbled
2tablespoonshoney
2tablespoonspistachios, roasted and salted
Instructions
Heat the grill to 350 degrees Fahrenheit. Cut nectarines in half with a sharp knife and remove the pits. Brush each half lightly with olive oil.
Place nectarine flesh-side down on the hot grill and close the lid. Cook for 10-12 minutes until nectarines are charred and softened, checking them at least once quickly while on the grill.
Turn each half over and grill skin-side down for another minute. Remove nectarines from the grill and top each one with a dollop of goat cheese, roasted pistachios and a drizzle of honey. Recipe makes 4 servings/4 halves.

Substitutions and Additions:
FRUIT-The most obvious substitution in this recipe is to use peaches instead of nectarines. I have grilled both and both are delicious. My choice is solely based on which fruit looks the freshest when I am shopping. I have also grilled plums and they are equally delicious!
TOPPINGS- We really love goat cheese, roasted pistachios and honey on our grilled nectarines. But your can use mascarpone cheese, cream cheese, whipped cream or top them with a big scoop of ice cream and a pinch of cinnamon. Again, it depends on what your family prefers. Be sure to comm
