Ingredients
3largerusset potatoes
4tablespoonsolive oil
1teaspoongarlic, minced
1/2teaspoonrosemary, dried
1/2teaspoonsalt
Parmesan cheese or sour cream, grated
Instructions
Cut a thin slice of potato lengthwise from the bottom of each potato so it forms a base for the potato and stops it from rolling around. Now cut slices along the top of the potato about 1/8 to 1/4 inch apart. Do not cut all the way through the potato, as you want the slices to remain connected.
Mix the oil, garlic and herbs in a small bowl. Place the potatoes on a foil-lined baking pan. Brush the oil mixture in between the slices of each potato.
Bake the potatoes in the oven at 375 degrees for about 40-45 minutes until crispy and cooked through.
Remove potatoes from the oven and sprinkle with a bit of Parmesan cheese or a dollop of sour cream, if desired. This recipe makes 3 servings--such a great side dish!
