Homemade Fish Sticks are crunchy and flavorful and will remind you of your childhood. Use a meaty white fish for this recipe.

Ingredients
1/2cupcanola oil
2poundswhite fish fillets, about 3 large fillets
1teaspoongarlic salt
1teaspoonblack pepper
2largeeggs , with a splash of milk, beaten well
1 1/2cupsseasoned bread crumbs
1/2cupcornmeal
1/2teaspoonpaprika
1largelemon, cut into wedges
Instructions
Cut your fish fillets into sticks. Each fillet should give you about 7-8 sticks. Each fish stick should be about the size of a finger, 4 inches long by 1 inch wide. Toward the tail of the fillet the sticks will be thinner. Sprinkle each fish stick with garlic salt and black pepper.
Heat the oil in a medium skillet over medium heat. Beat the eggs and water in a shallow dish. Put the bread crumbs, cornmeal and paprika into another shallow dish and mix thoroughly. Dip each fish stick in egg and then coat with the bread crumb mixture.
Place your fish sticks gently into the hot oil, always facing them away from you so not to get splashed with oil. Fry for about 3-4 minutes until golden brown.
Turn and cook the other side for another 3-4 minutes. When done, remove the fish sticks to a baking pan lined with parchment paper to drain. Sprinkle with an additional pinch of salt and pepper to taste. Keep warm in the oven until ready to serve. Recipe makes 4 servings.
