Cook lasagna noodles according to package instructions. Drain well. Wash spinach, dry and remove the stems.
In a medium bowl, combine ricotta cheese, egg, 1/4 cup of grated Parmesan, and Italian seasoning. Stir until combined, set aside.
In a large skillet, cook the sausage until browned. Add one jar of prepared pasta or marinara sauce. Remove from the heat.
On a large sheet pan, lay 6 lasagna noodles side by side. Spread each with ricotta cheese mixture. Then add meat sauce and fresh spinach leaves. Roll each noodle up and place them seam side down in a 9x13-inch baking that has been sprayed with cooking spray. Cover with another jar of pasta sauce and sprinkle with mozzarella cheese.
Bake in a 350 degree oven for 25 minutes. Add remaining grated Parmesan and bake for 2 more minutes until cheese is melted. Remove lasagna roll-ups from the oven and allow to cool slightly.
Serve with an Italian salad and crusty bread. Recipe makes 12 servings.

Lasagna Roll-Ups are versatile because you can customize them with a variety of your family's favorite ingredients. If you like ground beef with tomato sauce, fill the lasagna noodles with that.
