Ingredients
3mediumavocados, chopped and slightly mashed
2smalltomatoes, chopped
1/2smallonion, diced
1largelime , juiced
2tablespoonscilantro, fresh, chopped
1/2teaspoonsalt
1/2teaspoonblack pepper
1/2teaspooncayenne pepper, optional
Instructions
Chop the avocado into small pieces and place them in a bowl. Add the juice of a lime and stir to coat. This prevents the avocado from turning brown and adds a bright flavor to the dip.
Add the chopped tomatoes, diced onion, salt, pepper, and cilantro. Stir all together. If you do not like cilantro, you can also use flat-leaf parsley. Add a pinch of cayenne pepper for some spice. Recipe makes 6 servings.

Tips on how to cut an avocado:
Cut the avocado in half lengthwise from top to bottom, rotating the knife around the pit and turning the avocado.
Twist each half in the opposite direction and the avocado will separate down the middle, leaving a large seed in one half.
Use your knife to cut the avocado in half lengthwise again. Twist the knife to remove one quarter of the avocado and then use your fingers to twist off the seed.
Cut lines through the flesh of the avocado and then cut line in the opposite directions, making cubes. Slide a spoon between the skin and the flesh of the avocado and scoop it out. The cubes will separate easily from the tough outer skin of the avocado. Place the cubes in a bowl.
