Refrigerator Zucchini Pickles make a great addition to a sandwich or salad and can be enjoyed weeks after you harvest them.

Ingredients
4smallzucchini
1mediumVidalia onion
For the brine:
6 cupswater
2tablespoonssalt, canning and pickling
Herbs and Spices:
6sprigsdill, fresh
1 1/2teaspoonsgarlic, minced, divided
1 1/2teaspoonspickling spice , divided
3/4teaspoonred pepper flakes, divided
For pickling mixture:
2cupswater
1 cupapple cider vinegar
1/4 cupgranulated sugar
1/2tablespoonsalt, canning and pickling
Instructions
Wash and slice the zucchini into thin rounds, about 1/4 inch thick. Peel and slice onion. Place vegetables in a large bowl with 2 tablespoon of pickling salt. Cover all with cool water and allow to brine for one hour.
Place 1/2 teaspoon minced garlic, 1/2 teaspoon of pickling spice and 1/4 teaspoon red pepper flakes in the bottom of each of 3 pint jars. Strain vegetables and shaker strainer to remove excess water. Pack each jar with zucchini, sprigs of fresh dill, and onion slices, leaving 1/2 inch of headspace.
In a small saucepan, heat 2 cups of water, 1 cup of apple cider vinegar, 1/4 cup of granulated sugar and 1/2 tablespoon pickling salt to boiling. Pour the mixture over the zucchini and onion slices in each jar. Cap each jar with a lid and a ring. Allow jars to cool for 30 minutes before putting them in the refrigerator.
Refrigerate the pickles for at least 24 hours before serving. Recipe makes 3 pint jars of zucchini pickles. Keep pickles for up to one month in the refrigerator.

Notes
Do I need to brine my zucchini and onions before pickling them?The brining process removes some of the water in the zucchini, which makes them stay crisper and hold their shape better after pickling. You can skip this process and still have flavorful, crunchy pickles. But if you plan to keep them for a few weeks, the brining process will keep your pickles crisper longer.For the onions, brining them removes the sharp onion flavor and makes them more mild.
