Ingredients
Cookie layer:
1/2cupbutter, softened
1/2cupbrown sugar
1/2cupwhite sugar
1teaspoonvanilla extract
1egg
1cupflour
1/2cupgraham cracker crumbs
1/2teaspoonsalt
1/2teaspoonbaking soda
1/2cupmini chocolate chips
Top layers:
12ouncesmilk chocolate chips
10ouncesmini marshmallows
Instructions
Preheat the oven to 350 degrees. In a large bowl, mix butter, sugar, brown sugar, and vanilla with a mixer on low speed. Add egg and beat until blended. Add dry ingredients and blend well. Stir in mini chocolate chips.
Spread the cookie dough in the bottom of a 9×9-inch baking dish. Bake at 350 degrees for 15-18 minutes. Remove from the oven and allow to cool for 10 minutes.
Pour the milk chocolate chips on top to cover cookie bottom. Layer mini marshmallows over chocolate chips. Broil in the oven under 400 degree broiler for 3-4 minutes. Watch it closely, so you don’t burn the marshmallows. The top should be golden brown. Remove from the oven and cool slightly before serving. Recipe makes 16 bars.
