Flour tortillas get layered with seasoned ground beef, tomatoes, green chilies, pinto beans and Pepper Jack cheese to make this delicious Spicy Tortilla Bake.

Ingredients
1 1/2poundsground beef
1envelope taco seasoning mix, mild
10ouncesRotel Tomatoes with green chilies
15ouncespinto beans
2cupsPepper Jack cheese, shredded
2cupscheddar cheese, shredded
8flour tortillas, 8 inch size
16ouncesSalsa Verde, mild
Instructions
Spray a 13x9 inch baking dish with cooking spray. Place two tortillas in the bottom of the dish to cover.
In a large skillet, cook the ground beef over medium heat until no longer pink. Drain the grease and add the taco seasoning and tomatoes.
Drain and rinse the pinto beans in a small strainer. Add the beans to the skillet. Stir and cook the beef, tomatoes, and beans for 5 minutes.
Place 1/3 of the beef and bean mixture on top of the tortillas in the bottom of the baking dish and spread evenly.
Mix the shredded Pepper Jack and Cheddar cheeses together in a medium bowl. Sprinkle 1 cup of the shredded cheese mixture over the beef and bean mixture. Cover the cheese mixture with two more flour tortillas.
Repeat the layers two more times, ending with two tortillas on top. Pour the Salsa Verde over the top of the casserole. Bake in a 350 degree oven for 35 minutes.
Remove from the oven and allow the casserole to cool for 5 minutes before serving. Add more shredded Pepper Jack to the top, if desired.
