Ingredients

zucchini

washed, stems removed

tablespoon
olive oil
1/2
yellow pepper
,
sliced and seeds removed

cup
cherry tomatoes
,
cut in half
1/2
small
yellow onion
,
sliced thin
1
teaspoon
Italian Seasoning
1
tablespoon
balsamic vinegar
salt and pepper to taste
1/4
cup
Parmesan cheese
,
optional
Instructions
Add the olive oil to a non-stick skillet over medium heat. Use a spiralizer to cut the zucchini in spirals.
Add the remaining ingredients to the pan and stir. Saute for about 3 minutes until tender.
Add a sprinkle of Parmesan cheese to finish it off. Serve with chicken or fish as a side dish. Recipe makes 4 servings.
Notes
Try using a spiralizer to make cucumber ribbons, carrot strings and so much more. It is an inexpensive way to serve your vegetables in a fun new way.
