Tuscan Salmon with Pasta takes only 35 minutes to prepare and incorporates all the delicious flavors of Italy!

Ingredients
3salmon fillets, about 4 or 5 ounces each
2tablespoonsolive oil
2tablespoonsunsalted butter
3teaspoonsgarlic, minced
1smallyellow onion, chopped
1/2cupchicken broth, or water
1cuptomatoes, crushed
1teaspoonItalian Seasoning
1cupsour cream, or heavy cream
salt and pepper, to taste
3cupsspinach leaves
1/3cupParmesan cheese, grated
1teaspoondried parsley
Instructions
Add the olive oil to a large skillet set to medium-high heat. Sprinkle the salmon with salt and pepper and sear the fish on each side for 5-7 minutes. Once the pink center is gone and the salmon is cooked through, remove the fillets to a plate and set aside.
Melt the butter in the same skillet. Stir in the chopped onion and cook for about five minutes until soft. Add the garlic and cook for one more minute. Stir in the tomatoes, chicken stock, and Italian Seasoning. Simmer while stirring for a few minutes to thicken the sauce. Turn the heat down to low and add the sour cream. Add salt and pepper to taste.
Stir the sauce until well blended. Add the spinach until wilted. Add the Parmesan cheese and stir until melted.
Add the seared salmon fillets back to the pan and spoon the sauce over each fillet. Add the dried parsley flakes and simmer the fillets for 2-3 minutes until heated through.
Prepare some thin spaghetti or pasta or your choice. Serve the salmon over the pasta with a side veggie. I sautéed green beans in some butter. Recipe makes 3 servings.
