Casseroles are an inexpensive and flavorful way to feed your family and usually take only minutes to prepare. This Taco Casserole is no exception. Savory beef, crispy corn chips, spicy salsa, and gooey cheese are layered in a baking dish to make a meal your entire family will love.

This is a delicious recipe for Taco Tuesday or any easy weeknight meal. Most of these ingredients will already be in your pantry. Corn chips, ground beef, black beans, tomatoes and green chiles come together to make a yummy casserole. Full of flavor and ready in about 30 minutes, Taco Tuesday never looked so good.

What’s needed?

  • Frito corn chips (about 4 cups)
  • 1 1/2 pounds ground beef
  • 1 packet taco seasoning
  • 1/2 cup water
  • 1 medium onion, chopped
  • 1 5-ounce can chopped green chiles
  • 1  15-ounce can black beans, crushed (optional)
  • 1  16-ounce jar mild salsa
  • 2 cups shredded cheddar cheese

How to make Taco Casserole?

  • Spray the bottom of a 13×9 baking dish with cooking spray. Add the corn chips to cover the dish. Break them into smaller pieces if needed.
  • Add the ground beef and the onion to a skillet and cook until browned. Drain the grease from the skillet and add a packet of taco seasoning, 1/2 cup water and green chilies. Stir all until combined and sauce begins to thicken, about 5 minutes.
  • Spoon ground beef mixture over the corn chips in the baking dish.
  • Drain and rinse the black beans. Using your hands or a fork, crush the beans slightly and add them to the baking dish. If you do not like black beans, you can skip this step.
  • Pour the salsa over the beans. Sprinkle the shredded cheese over the casserole.

  • Bake the dish at 350 degrees for 25-30 minutes. Remove the casserole from the oven and allow it to cool slightly.

Serve Taco Casserole with a side of lettuce and sour cream. This dish also travels well and is a great addition to any tailgate party on game day.
