What’s needed?

  • 3 chicken breast halves, cut into 1/2 inch pieces
  • 2 tablespoon olive oil
  • 1 medium onion, chopped
  • 1 celery stalk, washed and chopped
  • 32-ounces of chicken broth
  • 1 medium zucchini, sliced
  • 8 ounces sun-dried tomatoes, chopped
  • 15-ounce can chickpeas
  • 1 cup half-n-half or milk
  • 2 tablespoon cornstarch
  • 1 teaspoon salt and black pepper
  • 1 teaspoon oregano
  • 1 teaspoon dried parsley
  • 1 cup mini bow tie pasta
  • shredded Parmesan cheese

How to make Tuscan Chicken Soup?

  • In a large dutch oven over medium heat, saute the onion, celery, and chicken pieces in canola oil until the chicken is no longer pink, about 10 minutes.
  • Add the chicken broth and reduce the heat to medium low. Add the remaining ingredients, except for the cream, pasta and Parmesan cheese, and cook for 15 minutes covered.
  • Add the cream and bow tie pasta and cook uncovered for another 15 minutes.
