Spicy Tortilla Bake

This casserole is easy to assemble and bakes in the oven in just 35 minutes. Flour tortillas get layered with the spicy flavors of seasoned ground beef, diced tomatoes, green chilies, pinto beans and pepperjack cheese. Salsa Verde tops the whole casserole just before baking it. This ‘Mexican Lasagna’ makes a delicious weeknight meal!

Spicy Tortilla Bake

What’s needed?

  • 1 1/2 pounds ground beef
  • 1 packet mild taco seasoning
  • 1 10 ounce can Rotel mild diced tomatoes and green chilies
  • 1 16 ounce can pinto beans
  • 1 1/2 cups of shredded Pepper Jack cheese
  • 6 flour tortillas (8 inch size)
  • 1 16 ounce jar mild Salsa Verde

How to make Spicy Tortilla Bake?

  • Spray a 13×9 inch baking dish with cooking spray. In a large skillet, cook the ground beef over medium heat until no longer pink. Drain the grease and add the taco seasoning and tomatoes. Drain and rinse the pinto beans in a small strainer. Add the beans to the skillet. Stir and cook the beef, tomatoes, and beans for 5 minutes. Place 1/3 of the beef mixture in the bottom of the baking dish and spread evenly. Sprinkle 1/2 cup of the Pepper Jack cheese over the beef mixture.

  • Cover the beef mixture and cheese with two flour tortillas. Repeat the layers two more times, ending with two tortillas on top. Pour the Salsa Verde over the top of the casserole.
Add the salsa verde.
  • Bake in a 350 degree oven for 35 minutes. Remove from the oven and allow the casserole to cool for 5 minutes before serving. Add more shredded Pepper Jack to the top, if desired.
