I absolutely love walking out my back door and picking fresh blackberries from my garden. Blackberries are juicy and plentiful right now. I made Blackberry Cobbler this morning for a treat for my family. Simple ingredients and wonderful, juicy berries make such a great summertime dessert.

Blackberries are a superfood! They are rich in fiber, high in Vitamin C and are even said to have anti-inflammatory abilities and can improve brain health. These sweet, yet tart, berries are not only full of flavor, but are so very good for you, too.

Planting a blackberry bush is a great addition to a flower bed or garden. Once rooted, it grows each year with minimal maintenance. Each spring, simply trim back the branches that grew fruit during the previous season. Allow the new growth to mature and it will also provide fruit. We love to eat fresh blackberries with cereal for breakfast, as well as using them in delicious desserts like this one.

Blackberry Cobbler

What’s needed?

  • 1/3 cup butter, melted
  • 1 cup sugar
  • 1 cup flour
  • 1/2 cup milk
  • 1 egg
  • 1/2 teaspoon lemon zest
  • 2 cups of fresh blackberries
  • 1 tablespoon sugar for garnish

How to make Blackberry Cobbler?

  • Preheat the oven to 350 degrees. Pour the melted butter in the bottom of an 8×8 baking dish.
  • Mix sugar, flour, egg, lemon zest, and milk together until combined. Pour batter over the butter. Do not stir.

  • Bake for 40-45 minutes until cobbler is golden brown and cooked through. Remove the cobbler from the oven, sprinkle with sugar. Allow to cool slightly.
