Each year, as I pick zucchini from my garden, I search for new recipes for cooking these green beauties. This veggie saute features spirals of zucchini and is a terrific side dish for grilled chicken or fish. It takes less than 10 minutes to get it from your cutting board to your dinner table. Spiral Zucchini and Pepper Saute

For many, the go-to zucchini recipe is usually bread or cake. There’s certainly nothing wrong with that. Those are some of my favorite preparations, too. But there are other quick and easy ways to make zucchini the star of the plate and more tempting for your family to eat.

A spiralizer does just that! It turns vegetables, like zucchini, carrots, and seedless cucumber, into long curly strands or spirals. Spiralizers come in all shapes and sizes. I have two vegetable cutters in my kitchen. The smaller one is cone-shaped on each end; the top end cuts thin, spaghetti-like strands and the bottom end cuts thicker ribbons.

What’s needed?

  • 3 small to medium zucchini, washed and stems cut off
  • 1 tablespoon olive oil
  • 1/2 yellow pepper, sliced and seeds removed
  • 1 cup cherry tomatoes, cut in half
  • 1/2 small yellow onion, sliced thin
  • 1 teaspoon Italian Seasoning
  • 1 tablespoon balsamic vinegar
  • salt and pepper to taste
  • 1/4 cup Parmesan cheese, optional

How to make Spiral Zucchini and Pepper Saute?

  • Add the olive oil to a non-stick skillet over medium heat. Use a spiralizer to cut the zucchini in spirals, allowing it to fall right into the pan.

  • Add the rest of the ingredients. Toss and saute the vegetables for about 3 minutes.

Add a sprinkle of Parmesan cheese to finish it off. Now that was fast…and such a delicious way to eat those summer veggies!
