We began our day and our New Year with a plate of my Grandpa Smith’s Pancakes topped with fresh strawberries. They are light and fluffy, delicious and satisfying ever time. These pancakes bring back such sweet memories from my childhood. My grandfather’s recipe has been passed down one generation to the next since he created it in the 1940’s and it remains alive and loved in my home. Below is a photo of my Grandmother Virginia and my Grandfather Steve. My grandfather was a chef and known for making amazing pancakes and my grandmother was a wonderful baker and we loved her perfect Christmas cookies.

After I got married, my mother gave me several family recipes. This is the original recipe card she gave me for ‘Grampa’s Pancakes’. The card is stained and wrinkled from using it for so many years.

Grandpa Smith’s Pancakes

Mix together:

  • 2 1/2 cups flour
  • 5 tsp baking powder
  • 4 tbsp sugar
  • 1 1/2 tsp salt

In a separate bowl, mix together:

  • 2 eggs
  • 6 tbsp canola oil
  • 2 cups milk

How to make Grandpa Smith’s Pancakes?

  • Add wet ingredients to dry and mix well. You can add a mashed ripe banana, a couple teaspoons of cinnamon, or some chocolate chips to the batter, just to mix things up a bit.
  • Cook on a griddle at 350 degrees or in a skillet on medium high heat. When you see little bubbles form on the pancakes, it is time to flip them over.

  • Cook for 2 more minutes and serve hot with fruit and syrup. The recipe makes 16 medium pancakes. Put any leftover pancakes in a freezer bag and freeze for later use. You’ll be glad you did!
