Pumpkin Crunch is soft like pumpkin pie on the bottom and crunchy on top like a crumble. My mother-in-law, Sherrie, originally gave me this recipe years ago. She made it for my birthday and I was hooked! It is so easy to make and turns out delicious every time. It is a great Fall dessert for any family gathering!
Only 8 ingredients are required to make this deliciously simple Fall dessert. Serve it with vanilla ice cream to make a dessert that your family will gobble up. It always disappears quickly in my house!
Pumpkin Crunch
- 16 ounce can pumpkin
- 12 ounce can evaporated milk
- 1 cup sugar
- 3 eggs
- 4 teaspoons pumpkin pie spice
- 1 box yellow cake mix
- 3/4 cup unsalted butter, melted
- 1 cup chopped walnuts or pecans
How to make Pumpkin Crunch?
- Using a hand mixer, combine the first 5 ingredients in a large bowl. Pour the pumpkin mixture into a greased 9×13 inch baking dish. Sprinkle one box of yellow cake mix over the pumpkin mixture.
- Melt the butter and drizzle it over the cake mix. Add the chopped walnuts to the top of the dessert.
- Bake in a 350 degree oven for 50-55 minutes. The dessert will be golden brown and crunchy on top and soft on the bottom.
- Remove the dessert from the oven and cool slightly.
How to serve Pumpkin Crunch?
This delicious Fall treat is best served warm. You can serve Pumpkin Crunch with vanilla ice cream or whipped cream…or live a little and serve it with both! Simply yummy!
