3 minutes x 5 waffles: 15 minutesmins
Total Time: 30 minutesmins

2eggs
1 1/2cupsmilk
2cupsall-purpose flour
1teaspoonbaking soda
1teaspoonvanilla
1/2teaspoonsalt
1/3cupcanola oil
Instructions
Heat the waffle iron. Spray the waffle iron lightly with cooking spray. Mix the eggs and the milk in a large bowl. Add the rest of the ingredients and mix thoroughly.
Using a measuring cup, pour enough batter to cover the center of the waffle iron, mine holds about 1/2 cup of batter. Do not overfill it or it will spill out the sides of the waffle iron.
Close the waffle iron and allow to cook until golden brown, about 2-3 minutes. Most waffle irons have an indicator light that will flash when the waffle is ready.
Remove the waffle and top it with your favorite fruit, nuts and syrup. Repeat this process until batter is gone. Recipe makes 5 waffles.

Notes
Need more topping ideas? How about peanut butter and strawberry jam, bacon and blueberry syrup, pineapple and shredded coconut, or fried chicken and maple syrup? Just about anything you like can go on top of a waffle. My son's favorite is chocolate chips, so I actually sprinkled them on before I closed the lid. The chocolate chips melt right into the waffle.
