Ingredients
6Keebler mini graham cracker pie crusts, 4-ounces
Cream Filling:
8ouncescream cheese, softened
1/2cupconfectioners' sugar
1 teaspoonvanilla extract
2 tablespooonsmilk
Apple Topping:
2tablespoonsunsalted butter
1large Honeycrisp apple, or two small apples, peeled and chopped
1tablespoonlemon juice
2tablespoonsbrown sugar
1/2teaspoonground cinnamon
3tablespoonsquick-cooking oats
1/4cupgraham cracker crumbs, crushed, for garnish
1/2cup whipped cream, for garnish
Instructions
Place each mini graham cracker crust on a baking sheet. In a medium bowl, beat softened cream cheese, confectioners' sugar, milk and vanilla with an electric hand mixer until smooth and creamy. Divide the cream mixture between the 6 crusts, spreading evenly.
Peel and chop apple into small pieces, place in a small bowl and add lemon juice. In a medium non-stick skillet, melt the butter over medium low heat. Add the apples, brown sugar, and cinnamon, cook for 6-8 minutes until soft and lightly golden. Add the quick-cooking oats and stir, cook for another two minutes. Remove apple mixture from the heat and allow to cool slightly.
Spoon the apple topping over each tart. Sprinkle with crushed graham cracker crumbs or chopped pecans for added crunch. Serve with a dollop of whipped cream, if desired. Recipe makes 6 servings.

Variations to Apple Cinnamon Cream TartsCARAMEL SAUCE- Drizzle caramel topping over each tart before serving. It's an easy way to add a little something extra special to this dessert. Don't forget to top each tart with a dollop of whipped cream, too.PECANS- Add a nutty flavor and more texture to the dessert by adding chopped pecans to the apple filling before assembling the tarts. They add protein and lots of crunch.DRIED CRANBERRIES- These really add a burst of fruit flavor to the recipe. Stir dried cranberries into the apple filling before putting it on top of the creamy layer in each tart.GLAZE- Don't have any whipped cream on hand? Not to worry! Simply mix confectioners' sugar with a small amount of milk to form a glaze that can be drizzled over the tarts before serving. This is a sweet way to garnish each little tart!
