Ingredients
Cake:
1/2cupunsalted butter, softened
1cupgranulated sugar
2largeeggs
1teaspooonvanilla extract
2cupsall-purpose flour
3teaspoonsbaking powder
1teaspoonbaking soda
1/2teaspoonsalt
1cupsour cream
1 1/4cupapples, peeled and chopped
1/2cuppear, peeled and chopped
Crumble topping:
1cuplight brown sugar
1teaspooncinnamon
2tablespoonsunsalted butter, cold
1/2cuppecans , or pistachios, chopped
Instructions
Preheat the oven to 350 degrees F. Spray a 13x9-inch baking dish with cooking spray and set aside.
In a large bowl, use an electric mixer to cream butter and sugar until light and fluffy, about 5 minutes. Beat in eggs and vanilla.
Combine the flour, baking powder, baking soda and salt. Add to the creamed mixture alternately with the sour cream. Fold in chopped apple and pear. Batter will be very thick. Spoon it into the greased baking dish.
If adding extra fruit to the batter, be careful not to use more than 2 cups of fruit in total, as it will make your cake too wet, resulting in a cake that may fall apart when you cut it.
In a medium bowl, combine brown sugar and cinnamon. Cut in butter until the mixture forms course crumbs. Stir in chopped pistachios (or pecans) and sprinkle evenly over the batter.
Bake until a toothpick inserted in the center comes out clean, about 35-40 minutes. Cool on a wire rack before cutting. Recipe makes 15 servings.
