I made one small change to the original recipe. Instead of pecans in the crumble topping, I used chopped pistachios. They make the best crumble topping for this coffee cake!

Step-by-Step Instructions:

  1. Preheat the oven to 350 degrees F. Spray a 13×9-inch baking dish with cooking spray and set aside.
  2. In a large bowl, use an electric mixer to cream butter and sugar until light and fluffy, about 5 minutes. Beat in eggs and vanilla.
  3. Combine the flour, baking powder, baking soda and salt. Add to the creamed mixture alternately with the sour cream. Fold in chopped apple and pear. Batter will be very thick. Spoon it into the greased baking dish.
  4. In a medium bowl, combine brown sugar and cinnamon. Cut in butter until the mixture forms course crumbs. Stir in chopped pistachios (or pecans) and sprinkle evenly over the batter.
  5. Bake until a toothpick inserted in the center comes out clean, about 35-40 minutes. Cool on a wire rack before cutting. Recipe makes 15 servings.
