Ingredients
2tablespoonsunsalted butter
13ouncessmoked sausage, turkey, pork or beef, cut into thick slices
1medium onion, chopped
1/2cupcarrots, chopped
1cupegg noodles, uncooked
4cupscabbage , chopped into 1-inch pieces
salt and black pepper to taste
Instructions
Melt 2 tablespoons of butter in a braising pan over medium heat. Add slices of smoked sausage to the pan and brown evenly on both sides. After browning, remove from skillet to a plate lined with paper towels.
Add the chopped onion and carrots to the pan and sauté until soft, about 6-8 minutes. Add the chopped cabbage and cover with a lid. Continue cooking until cabbage is softened, about 15 minutes.
While the cabbage is simmering, add the uncooked egg noodles to a saucepan of boiling water. Reduce heat and simmer noodles until tender, about 7-8 minutes. Drain and set aside.
When cabbage has softened, add egg noodles and smoked sausage to the pan. Stir to combine all. Salt and pepper to taste. Add another tablespoon of butter, if desired. Recipe makes 4 servings.
