Ingredients
1cupunsalted butter
2 1/2cupsbrown sugar, packed
2largeeggs
2teaspoonsvanilla extract
1 1/2cupsall-purpose flour
2teaspoonsbaking powder
1/2teaspoonsalt
2cupspecans, chopped
1/4cupconfectioners' sugar, for garnish
Instructions
Preheat the oven to 350 degrees fahrenheit. Begin by making the caramel. Add the butter and brown sugar to a saucepan over medium heat. Stir until butter is melted and sugar is dissolved. Remove the saucepan from the stove.
In a large bowl, whisk the eggs, vanilla and caramel mixture until combined.
In a medium bowl, stir together the flour, baking powder and salt. Gradually add the flour mixture to the wet ingredients. Stir in the pecans.
Spray a 13x9-inch baking pan with cooking spray. Spread the batter evenly in the pan.
Bake the pecan bars at 350 degrees for 25-30 minutes. Remove from the oven and cool the bars slightly in the pan before cutting into squares. Recipe makes 24 bars.
