For the fries:
4slicesbacon
canola oil for frying
4largepotatoes, cut into 1/2-inch sticks
Instructions
Meatloaf:
Mix all ingredients, except the bacon, in a large bowl. Form into four small loaves. Place the loaves in a large baking dish.
Cut each strip of bacon in half and place on top of meatloaf. Bake in a 350 degree oven for 35-40 minutes.
Fries:
While the meatloaf is baking, heat about 36 ounces of canola oil in a medium or large Dutch oven. You should have about 3 to 4 inches of oil in the pan. Heat to 350 degrees. Cut your potatoes into 1/2 inch by 1/2 inch sticks. I do not peel the potatoes.
When oil is hot, drop a few sticks at a time into the oil. I do about two potatoes at one time. NEVER leave the stove when frying something in hot oil. Fry the potatoes for about 7-8 minutes.
Remove them from the oil with a long-handled slotted spoon. Place the hot fries on a plate lined with paper towels to drain. Repeat until all potatoes are fried. Sprinkle with sea salt and cracked black pepper.
To ensure crispness, place all fries on a cookie sheet lined with parchment paper and place under a 400 degree broiler for about 5-7 minutes.
