These no-bake Coconut Bird Nest Cookies are easy to make and can be served for Easter or as a fun spring dessert.

Ingredients
2tablespoonsunsalted butter, melted
3tablespoonswater
2teaspoonsvanilla
2cupsconfectioners' sugar
2cupsflaked coconut, sweetened
1/2cupdry milk
food coloring or colored sugar, for
40jelly beans, Brach's Jelly Bird Eggs, for decorating
Instructions
Put the first 6 ingredients (except jelly beans) in a large bowl and mix thoroughly with a spoon.
If you want to make different color nests, divide the mixture equally into three smaller bowls. Add a few drops of food coloring to the coconut mixture to color each one. Use colored sugar to add flecks of color to the white coconut mixture.
Now you are ready to make your nests. Place a round tablespoonful of coconut mixture on a cookie sheet covered with parchment paper. Press down in the center of each nest with your thumb to make a hole. Repeat until bowl is empty.
Add two Brach's Speckled Jelly Bird Eggs to decorate each cookie. You should get about 6 nests from each bowl of coconut mixture. Cover the nests loosely with plastic wrap and allow them to set up, about an hour. The recipe makes 18-20 cookies.
Place the cookies on a serving tray with marshmallow Peeps, cut-out sugar cookies or whatever other Easter Treats you have on-hand. Your family will rave about these, mine does!

How to decorate Coconut Bird Nest Cookies:If desired, use food coloring to tint the cookies to just about any color you want. Colored sugar can be added to the coconut mixture to give it specks of color. Add Brach's Speckled Jelly Beans to the top of each nest for the eggs.
