Coconut Bird Nest Cookies

These kid-friendly treats are fun to make each spring! Coconut Bird Nest Cookies are sweet, colorful and require no baking. They are so quick and easy to make! Add them to your dessert line-up and they’re sure to get rave reviews! This classic cookie recipe is perfect for Easter or any spring gathering.

Coconut has always been a favorite of mine. My mother made Coconut Bird Nest Cookies many times over the years for Easter. I think she loved coconut even more than I did. Get the whole family involved and make some of these fun cookies for Easter or your next spring gathering.

Simpy mix the ingredients together and shape the cookies into a nest. Use food coloring to tint the cookie mixture yellow, green or brown, depending on your preference. Decorate them by adding Speckled Jelly Beans for the eggs in each nest. This is a great recipe to make with kids in the kitchen. Just watch their faces light up as they make these colorful Coconut Bird Nest Cookies.

Coconut Bird Nest Cookies

What’s needed:

  • Confectioners’ Sugar– Mix confectioners’ sugar with butter, water, dry milk and coconut to hold the cookies together and make them sweet.
  • Coconut– Use flaked, sweetened and shredded coconut for these delightful cookies. It really makes them look like a bird’s nest.
  • Dry Milk– Find dry milk in the powdered drink mix section, coffee section or baking section of the grocery store. Using it gives the cookies a creamy consistency.
  • Decorations– If desired, use food coloring to tint the cookies to just about any color you want. Colored sugar can be added to the coconut mixture to give a hint of color to the white flaky coconut. Add Brach’s Speckled Jelly Beans to the top of each nest for the eggs.

How to make Coconut Bird Nest Cookies?

Step-by-Step Instructions:

  • Put the first 6 ingredients (except jelly beans) in a large bowl and mix thoroughly with a spoon.
  • If you want to make different color nests, divide the mixture equally into three smaller bowls. Add a few drops of food coloring to the coconut mixture to color each one. Use colored sugar to add flecks of color to the white coconut mixture.
  • Now you are ready to make your nests. Place a round tablespoonful of coconut mixture on a cookie sheet covered with parchment paper. Press down in the center of each nest with your thumb to make a hole. Repeat until bowl is empty.

  • Add two Brach’s Speckled Jelly Bird Eggs to decorate each cookie. You should get about 6 nests from each bowl of coconut mixture. Cover the nests loosely with plastic wrap and allow them to set up, about an hour. The recipe makes 18-20 cookies.

  • Remove from the cookie sheet with a spatula and arrange on a serving tray with marshmallow Peeps, cut-out sugar cookies or whatever other Easter Treats you have on-hand. Your family will rave about these, mine does!

If you have any leftover cookies, store them in an airtight container. They will keep well for two weeks.
