Ingredients
2smallsummer squash, washed and sliced, remove ends
1tablespoonolive oil
1/2 teaspoongarlic powder
1/2teaspoonpaprika
1teaspoonItalian Seasonings
1/3cupPanko bread crumbs
1/4 cupParmesan cheese, grated
Instructions
Slice the summer squash into 1/4 inch slices. Drizzle lightly with olive oil.
Place the remaining ingredients for the coating in a gallon size bag and mix gently.
Add the sliced squash, a few pieces at a time, to the bag and shake gently to coat with the bread crumb mixture.
Place the squash slices in a single layer on a baking sheet coated with cooking spray. Bake the squash at 375 degrees for 14-15 minutes.
Broil for 1 1/2 minutes to make the tops crispy, if desired. Remove from the oven and serve as a side dish to grilled chicken, fish or beef. Recipe makes 4 servings.

Notes
When to pick summer squash?Make sure to pick or buy summer squash when they are small and light yellow in color. Squash that are allowed to grow bigger get a tough skin and can be full of seeds on the inside. Smaller summer squash are flavorful and more tender.
