Crispy Roasted Summer Squash

Yellow squash are beautiful and they taste great when paired with a variety of meats and seafood. We enjoy them sautéed in a skillet with some olive oil, onions and seasonings. But we like them even better when lightly coated in a mixture of bread crumbs and parmesan cheese and roasted in the oven or air-fryer. Crispy Roasted Summer Squash

Summer squash is considered a SUPERFOOD because of its nutritional value. High in potassium, vitamins A and C, and loaded with fiber, this squash is a healthy addition to any summer meal. And summer squash is low in calories and carbs, which means it is perfect for a low-calorie or Keto diet.

When to pick my summer squash?

Make sure to pick or buy summer squash when they are small and light yellow in color. Squash that are allowed to grow bigger often get a tough skin and can be full of seeds on the inside. Smaller summer squash are flavorful and more tender.

Making Crispy Roasted Summer Squash

Slice your summer squash thin, about 1/4 inch thick, so the slices will roast and cook evenly. The crispy coating of panko bread crumbs and grated parmesan cheese gives the squash flavor and a wonderful crunch.

Crispy Roasted Summer Squash Recipe

Ingredients:

  • Summer Squash– Use small summer squash that are light yellow in color. Wash and slice them in 1/4-inch thick rounds.
  • Spices and Herbs– Garlic powder, paprika and Italian seasoning are mixed with the breadcrumbs to form a flavorful coating on the summer squash.
  • Breadcrumbs– Use breadcrumbs to give the squash a crunchy texture.
  • Parmesan Cheese– Grated Parmesan adds a slightly salty, cheesy flavor to the squash.

How to make Crispy Roasted Summer Squash?

Step-by-Step Instructions:

  • Once you have sliced your squash in 1/4-inch thick slices, drizzle lightly with olive oil. Place the bread crumbs, parmesan cheese and spices in a gallon-size plastic bag and shake. Add your squash slices and lightly coat with the bread crumb mixture.

  • Roast the slices of squash on a baking sheet at 375 degrees Fahrenheit for about 14-15 minutes. Broil for another 1 to 2 minutes, if desired, to make the squash extra crispy.

Crispy Roasted Summer Squash

Thin rounds of yellow summer squash roasted with a crunchy bread crumb and parmesan coating.
Servings: 4 servings
Prep Time: 10 minutes
Cook Time: 15 minutes
Total Time: 25 minutes

Ingredients 

  • 2 small summer squash, washed and sliced, remove ends
  • 1 tablespoon olive oil
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1 teaspoon Italian Seasonings
  • 1/3 cup Panko bread crumbs
  • 1/4 cup Parmesan cheese, grated

Instructions 

  • Slice the summer squash into 1/4 inch slices. Drizzle lightly with olive oil.
  • Place the remaining ingredients for the coating in a gallon size bag and mix gently.
  • Add the sliced squash, a few pieces at a time, to the bag and shake gently to coat with the bread crumb mixture.
  • Place the squash slices in a single layer on a baking sheet coated with cooking spray. Bake the squash at 375 degrees for 14-15 minutes.
  • Broil for 1 1/2 minutes to make the tops crispy, if desired. Remove from the oven and serve as a side dish to grilled chicken, fish or beef. Recipe makes 4 servings.
