A buttery graham cracker crust gets topped with a creamy key lime filling to make these Easy Key Lime Pie Bars.

Ingredients
For the crust:
2cupsgraham cracker crumbs, (Whole graham crackers can be crushed in a food processor or you can purchase crushed graham crackers in the baking aisle.)
8tablespoonsunsalted butter, melted
1/4cupgranulated sugar
For the filling:
6 ouncescream cheese
14ouncessweetened condensed milk
3largeegg yolks
1/2cupkey lime juice
1 tablespoonkey lime zest
For garnish:
whipped cream
small lime slices
Instructions
Preheat the oven to 325 degrees F. Line an 8x8-inch baking pan with parchment paper. Allow the ends of the paper to extend above the edges of the pan for easy removal of the bars after baking.
Mix the graham cracker crumbs, melted butter and sugar in a medium mixing bowl until thoroughly combined. Using the bottom of a measuring cup, firmly press crust mixture evenly into the bottom of the prepared baking dish. Bake the crust for 12 minutes. Remove crust from the oven and allow to cool while making the filling.
In a medium mixing bowl, beat the cream cheese until smooth. Add the sweetened condensed milk, lime juice and zest and beat until combined. Pour the filling evenly over the slightly cooled crust.
Increase oven temperature to 350 degrees F. Bake for 16-18 minutes, until the filling is set and the edges are beginning to brown.
Remove the bars from the oven and allow to cool completely at room temperature. Place them in the refrigerator for at least two hours to fully set the bars before cutting. Cut into 16 bars and garnish with whipped cream and lime slices. Recipe makes 16 bars.

Notes
Tips on cutting Key Lime Pie Bars
Using the edges of the parchment paper, carefully remove the pie bars from the pan and place them on a cutting board.
Cut the bars when they are cold using a sharp knife.
Wipe the knife in between cuts with a damp paper towel to remove excess filling.
Bars should be 2x2-inch squares, but can be cut into larger pieces, if desired.
