Chocolate Filling:

2/3cupgranulated sugar
3ouncesBaker's semi-sweet chocolate
3tablespoonsunsalted butter
Whipped Cream:
2cupsheavy whipping cream
3tablespoonsconfectioners' sugar
chocolate shavings, for garnish
Instructions
In a food processor, pulse the vanilla wafers until crushed and crumbly. Slowly add the melted butter while pulsing to combine. Pour crumb mixture into a 9-inch pie plate. Press mixture on the bottom and up the sides of the dish to form the crust. Place the pie crust in the refrigerator for at least 10 minutes to set.
Add eggs and sugar to a medium saucepan, whisk to combine. Stir over medium heat until digital thermometer reads 160 degrees. Mixture will become smooth and thick.
Turn off the heat and add the chocolate to the egg mixture. Stir until combined. Add the softened butter and stir until incorporated. Allow to cool slightly, until just warm.
In a large bowl, beat whipping cream until it begins to thicken. Add confectioners' sugar and beat until peaks form. Fold 2/3 of the whipped cream into the chocolate mixture. Pour the chocolate filling into the prepared pie crust and spread evenly. Refrigerate until ready to serve.
Before serving, add the remaining whipped cream to the top of the pie. Use a vegetable peeler to shave chocolate over the pie as a garnish. Slice the pie into 8 servings.
