As it is in every pie, the crust is so important. It is, after all, the foundation for the filling and pie toppings. Make the crust with crushed vanilla wafers and melted butter. Mix them together and press the crumbly mixture into a pie plate, then refrigerate it for 10 minutes to set the crust. It is simple, but adds so much flavor and texture to this French Silk Pie.

French Silk Pie was one of the desserts I served recently for Thanksgiving and it was the first one to disappear. It is luscious and chocolatey! It’s an easy no-bake dessert to add to your recipe collection.

Why do I need to cook the filling for this pie?
There are two reasons to cook the pie filling in this recipe. First, it helps to melt the sugar and make the filling smooth and sweet. This results in a creamy pie texture. Second, you must pasteurize the eggs in the filling to make them safe to eat. Eggs must be cooked at 160 degrees prior to eating them.
