Fresh peaches, tomatoes, red onion, peppers and cilantro come together to make a delicious summer salsa. Add a squeeze of lime to brighten the whole dish.

Ingredients
1largepeach, skins removed, diced
2mediumRoma tomatoes, seeds removed, diced
1/4cupred onion, diced
1smallgreen pepper, diced (or yellow pepper)
2tablespoonscilantro , chopped (or parsley)
1jalapeño pepper , seeds removed diced (optional)
1lime, juiced
salt and black pepper to taste
Instructions
Blanch the peaches by putting them in boiling water for 2 minutes. Peel them, remove the pits and chop into small pieces.
Chop all ingredients and place them in a medium bowl.
Add the juice of one lime and stir. Add salt and black pepper to taste.
Refrigerate the salsa until ready to serve. Keep salsa in a airtight container for up to two days. It is best when served within a few hours.
