Grampa's Pancakes are special in our home. My family has made my grandfather's recipe for pancakes for generations.

Ingredients
2 1/2cupsall-purpose flour
5teaspoonsbaking powder
4tablespoonssugar
1 1/2teaspoonssalt
2largeeggs
6tablespoonsvegetable or canola oil
2cupsmilk
Instructions
In a large bowl, mix dry ingredients. In a separate bowl, mix wet ingredients well. Add wet ingredients to dry and stir to combine. You can add a mashed ripe banana, a teaspoon of cinnamon or some chocolate chips, just to mix things up a bit.
Drop 1/3 cup batter onto a lightly greased griddle at 350 degrees or in a skillet over medium high heat. When you see little bubbles form on the pancakes, it is time to flip them over. Cook for 2 more minutes.
Remove them from the griddle and place on a plate. Serve hot with bacon and fruit. Recipe makes 16 medium pancakes.

Notes
Can I freeze pancakes?We sometimes have a few pancakes leftover and I simply slide 3 or 4 pancakes into a plastic freezer bag and seal it tightly. Place them in the freezer for up to one month. They make a great quick breakfast when popped into the toaster or microwave. They are also yummy for an after-school snack before heading out to a soccer match or baseball game. A delicious treat anytime!
