Grampa’s Pancakes and Sunday mornings just go together, like baseball and hot dogs. My grandfather created this pancake recipe back in the 1940’s and it has been our family’s Sunday morning tradition ever since. My mother made them for us growing up and now I make them for my family. You know it is Sunday morning when you can smell the pancakes!

Add-ins for Pancakes

Add your favorite pancake toppings or mix-ins to make these fluffy pancakes just right for your family.

MASHED BANANAS– Use an overripe banana for added sweetness and flavor. Place it on a plate and mash it with a fork before adding it to the batter.

CHOCOLATE CHIPS– This is a fun add-in for kids and adults. Sprinkle them over the pancakes on the griddle before flipping to cook the second side. What a treat to make chocolate chip pancakes for breakfast!

PEACHES– Finely chop fresh or frozen peaches and add them to the pancake batter.

CHOPPED PECANS– These add a great crunch and nutty flavor to the pancakes. Toast the nuts for even more pecan flavor.

PEANUT BUTTER– Don’t like the chunks of nuts in the pancakes? Just stir in some creamy peanut butter. It adds rich, nutty flavor to the pancakes. This is one of our favs! Serve them with jam on top, of course.

PUMPKIN PUREE– Your pancakes will steal the show if you add 1/l2 cup of pumpkin puree to the batter. Sprinkle in some pumpkin pie spice and you’ll have fall pancakes that will make everyone happy.

CINNAMON– Give the pancakes warm flavor by adding a teaspoon of cinnamon to the batter. You’ll have subtle, yet delicious cinnamon pancakes.

Grampa’s Pancake Recipe

Ingredients:

  • 2 1/2 cups all-purpose flour
  • 5 teaspoons baking powder
  • 4 tablespoons sugar
  • 1 1/2 teaspoons salt
  • 2 eggs
  • 6 tablespoons vegetable oil
  • 2 cups milk

How to make Grampa’s Pancakes?

Step-by-Step Instructions:

  • In a large bowl, mix dry ingredients. In a separate bowl, mix wet ingredients well. Add wet ingredients to dry and stir to combine. You can add a mashed ripe banana, a teaspoon of cinnamon or some chocolate chips, just to mix things up.
  • Drop 1/3 cup batter onto a lightly greased griddle at 350 degrees or in a skillet over medium high heat. When you see little bubbles form on the pancakes, it is time to flip them over. Cook for 2 more minutes.
  • Remove them from the griddle and place on a plate. Serve hot with bacon and fruit. Recipe makes 16 medium pancakes.

Can I freeze pancakes?

We sometimes have a few pancakes leftover and I simply slide 3 or 4 pancakes into a plastic freezer bag and seal it tightly. Place them in the freezer for up to one month. Be sure to label the bag with the date before freezing.

Frozen pancakes make a great quick breakfast when popped into the toaster or microwave. They are also yummy for an after-school snack before heading out to a soccer match or baseball game. A delicious treat anytime!

Family Tradition

When I got married, my mother wrote out several family recipes and gave them to me. Here’s the original recipe card for ‘Grampa’s Pancakes’, the card is stained and wrinkled from using it for so many years. It is a cherished possession and used frequently in my home. Making Grampa’s Pancakes has become a family tradition.
