Ingredients
15ounceschicken broth, low-sodium
1cupRice, 10-minute, uncooked
1cupcorn, frozen
1cupgreen beans, fresh or frozen
2poundscatfish fillets, (tilapia or shrimp)
1teaspoonItalian Seasoning
1teaspoongarlic salt
1teaspoonsmoked paprika
1/2teaspoonblack pepper
1teaspoondried parsley
4sliceslemon
Instructions
Set the electric skillet to 225 degrees Fahrenheit (or medium low on the stove-top).
The ingredients now get layered into the skillet. Add the chicken stock, uncooked rice, frozen corn, fresh green beans, and then the fish on top. Season with the herbs and spices and then lay the lemon slices on top of the fish.
Cover the skillet and simmer for 10-12 minutes. All of the liquid will be absorbed by the rice and the fish and vegetables will be tender. It's just that easy! Recipe makes 4 servings.
